RECIPES
These are some of my favorite recipes.
Some are more time consuming than others, but they are pretty good.
Most have been varied from the original in some way, to suit my family
and myself, and some are old family recipes. If you have any recipes
that you'd like to share, please send them to me and I will post them here,
credited to you. Enjoy!!
Popcorn Cake
1 lb. miniature marshmallows
2 sticks margarine
1 lb. plain M & M's
1 c. dry roasted peanuts
16 c. popped popcorn
1 small bag peanut M & M's
Melt margarine on stove, not in microwave.
Add marshmallows and let them melt. Mix the rest of the ingredients
with the marshmallow mixture. Put in an angel food cake pan that
has been sprayed with Pam or buttered. Press mixture lightly into
the pan. Chill and serve.
Banana Bread
2 c. sugar
2 sticks butter or margarine
2 eggs
3-5 bananas
2 c. flour
1 tsp. baking soda
2 tsp. baking powder
dash salt
1 c. chopped nuts (optional)
Cream together butter and sugar. Add
eggs and mix until smooth. Mash bananas and add to the creamed mixture.
Beat until smooth. Mix dry ingredients together and add to the banana
mixture. Pour batter into greased baking dish and bake at 350 degrees
for 45 minutes or until done. Let cool 20 minutes.
Beef Stew
1 lb. beef stewing meat
1/2 onion, chopped
lg. can stewed tomatoes
3 cloves garlic, chopped
3 carrots, bite sized pieces
2 stalks celery, bite sized pieces
1 bell pepper, bite sized pieces
4-5 peeled potatoes, bite sized pieces
1 tsp. dried basil
salt and pepper to taste
1 8 oz. can tomato sauce
Brown stewing meat in small amount of cooking
oil. Add onion and cook until clear, not brown. Add canned
tomatoes and basil, salt and pepper. Add tomato sauce and 4 cups
water. Add vegetables,saving potatoes until last, when the other
vegetables are almost done, about an hour. When all the vegetables
are tender, stew is done. Serve with warm french bread.
Mexicali Pork
8 boneless pork chops
1 tbsp. cooking oil
2 14 oz. cans stewed tomatoes, cut
up
1 8 oz. can whole kernel corn, drained
1 8 oz. can kidney beans, drained
1/2 c. long grain rice
1 4 oz. can diced green chili peppers
1/4 tsp. salt
few dashes (or more) hot pepper sauce
Trim fat from meat. In large skillet,
brown chops in hot oil, about 5 minutes on each side. Remove and
drain fat. In same skillet combine remaining ingredients, except
chops. Bring to boil. Place chops in tomato mixture, simmer
about 15 minutes. Transfer mixture to a large baking dish.
Bake, covered, at 350 degrees for 30 minutes. Uncover and bake about
10 minutes more or until rice is tender and pork is no longer pink.
